This question may sound very stupid. But I just need to clarify this. Do we need to send the original copy of Employment letter to each applicant or a photocopy would do?

If you are planning to apply for a couple (ex: your parents or in-laws), then one set of documents will be enough. Just make a photo copy for your own records and send the original to the applicants.
