Just one set of sponsor documents are enough. Put all sponsor documents in a separate bundle/folder to avoid any confusion.
Folder 1: Dad's documents - DS156, DS157, passport, DD, passport sized photos etc
Folder 2: Mom's documents - DITTO
Folder 3: Sponsor documents (one set only) - put invitation letter also here
Folder 4: Support documents from your parents - ex: their bank statements, property documents, etc.

You need to send two I-134s, one for each applicant.
And just one invitation letter which contains the name of both your mom and dad, and other sponsor documents can be just one.

Actually one set of sponsor documents are enough. I sent only one I-134 for my parents and they got a 10yr Mult visa without any issues. I put the I-134 along with other spnosor documents. Since we write both applicants names on I134, I have always been under the impression that one is enough. You may prepare two if you think that is safe.

Jaya,
I did read somewhere that you need to submit I-134 one for each applicant. I sent one for each applicant myself. But in any case, I think it is better off to carry two instead of one just in case :-)
