Can I buy insurance for my parents here in the USA
(from this website) as they've extended their stay
in the USA by another 2 months? Their original insurance
was from an Indian Company (Oriental Insurance Co.)

Yes, you can.It would be a new one.
(From your subject of the posting, its confusing . It will not be extension. The start date of the new policy can be choosen as the day when the other one is expiring).
